I like to bake. My husband likes to cook. This makes us a good team. Tonight Bryce tried a new recipe for Mexican pulled pork. The recipe and some nice photos (unlike mine which are just sufficient) can be found here http://www.phoo-d.com/2009/04/mexican-style-pulled-pork.html.
We do did a small bit of altering to the recipe. Despite living in Texas we could not find all of the Mexican spices that the recipe requested. I don’t do spicy so the jalapeno peppers were skipped. Also, we do not own a Dutch oven. Bryce just browned it in a pan on the stove top and then transferred the meat to a casserole dish covered with aluminum foil. Like MacGyver.
After it baked for like ever and the smell was making me drool it was FINALLY time to pull it out of the oven.
All of the fruit gets scrapped from the peels and then the meat gets shredded and mixed with all the good stuff in the pan.
Bryce opted for soft tacos while I had a major hankering for pulled pork nachos.
Dinner was delish. Plus there is like 4 pounds of meat left. I know what I’ll be having for lunch tomorrow…
